Refreshing and Delicious: How to Make a Minty Watermelon Salad

Some time ago, I mentioned on my Instagram stories that I created a vision board for what I wanted my life to look like in 2024. One of the things on this year’s agenda is to improve my health by incorporating more fruits and vegetables into my daily meals. I first experienced this minty fresh watermelon salad at an event my friend invited me to.

One of the things I want to achieve this year is to improve my health by incorporating more fruits and vegetables into my daily meals. I discovered a refreshing and delicious watermelon salad with a hint of mint at a friend’s event that I attended. At first, I only took two small pieces because I’ve never enjoyed watermelon. When I bit into it, my eyes were opened! The infusion of the two flavors was intoxicating, and I couldn’t resist returning for more.

Recipe For Minty Watermelon Salad

Determined to catch another slice of this minty dream, I decided to make it at home on a regular basis. I would love you to taste it, so I’m sharing the quick and easy recipe.

Here’s what you’ll need:

  • Watermelon (as much as you want)
  • Fresh mint (as much as you like)
  • Salt (enough to sprinkle over all of it)

Here’s what to do:

  1. Cut the watermelon into generous slices, remove the skin and crust, and cut them into cubes.
  2. Sprinkle salt over the watermelon cubes to enhance the sweetness.
  3. Mince the mint leaves and sprinkle them over the watermelon cubes.
  4. Let the flavors infuse for a few minutes.
  5. Serve and enjoy!

Note: I added pineapple as a side to this salad, and it added a significant flavor boost.
